Pumpkin overnight oats

I still don't know how I feel about overnight oats. I like them, but I don't. The problem is, I look forward to waking up and eating a bowl of oats that's been penetrated with electromagnetic radiation. I do not, however, look forward to waking up and eating a bowl of oats that's just come out of the refrigerator. Yeah, I know I can let them sit out to reach room temperature, but that involves me waking up at 5am to ensure they're not still cold by the time my stomach decides it needs to be fed. Still, I digress. But only becuase I've been trying to limit my use of the frankenoven. I eat the freaking overnight oats although I don't really care for them, because.. they're healthier. And that's what matters, right?

PUMPKIN OVERNIGHT OATS (GF)

1/2 c. rolled oats
1/4 tsp pumpkin pie spice
Pinch of fine sea salt
1/4 c. water
1/4 c. almond milk
3-4 tbsp pumpkin puree
1/4 tsp unsulphured molasses
2 tbsp maple syrup*
Pumpkin seeds
, optional

In a small bowl, stir together the oats, pumpkin pie spice and salt. Stir in the water and almond milk. In another small bowl, stir together the pumpkin puree and molasses, then stir into oats. Transfer to an air tight container and refrigerate overnight. In the morning, remove from fridge and stir in maple syrup and pumpkin seeds, if using.

*I use raw date syrup instead of maple syrup, but I haven't shared the recipe on my blog yet - sorry!

  1. haha. They look delicious though. I don't like overnight oats very much for the exact same reason. I have only had them once and haven't even considered having them again.

    But I suppose I would be willing to try these since they sound pretty good.

  2. Isobelle, these are so. much. better warm. But, you'll have to double the liquid (1 cups worth instead of 1/2). Also, sprinkle the final product with cinnamon and walnuts - you won't be sorry :)

  4. So you eat it cold? Is it good? I have my doubts. I've been experimenting with baked oatmeal lately.

  5. Yadsia - I take mine out of the fridge early so they're not too cold. But, I prefer baked oats to overnight oats - it's just that oats that haven't been cooked are much more nutritious.
